Crab with lime
This easy recipe was inspired by a wonderful meal we enjoyed Spain. It is so simple but looks good and tastes good too. It is a great make ahead canapé but also doubles as an easy get ahead starter or lunch (see further below). Brilliant for easy summer entertaining. Try it out, if you like crab I guarantee you won't be disappointed and neither will your guests.
Ingredients - makes 10 canapés
3 limes
50g white crab meat (half a tub of Seafood and Eat It)
1 tbsp mayonnaise
1 tsp lime juice
Zest of half a lime
1 tbsp chopped celery
1 tbs chopped coriander
Salt
Chives for decoration
Method
Cut 2 of the limes into slices, you will need 10.
Gently mix the crab with the mayonnaise, lime zest, juice, coriander, celery and salt to taste.
Put a teaspoonful of crab salad on top of each lime slice. Store, lightly covered, in the fridge until required.
Before serving add a couple of pieces of chive.
Crab salad - serves 3 (starter or lunch)
Ingredients
1 tub of crab (I used Seafood and Eat It)
2 tbsp mayonnaise
2 tsp lime juice
Zest of 1 lime
2 tbsp chopped celery
2 tbsp chopped coriander
1 tsp chopped chives
1 avocado, diced
2-3 tomatoes sliced
Rocket to decorate
Salt to taste
Method
Mix the crab gently with the mayonnaise, herbs, celery, lime zest and juice. If preparing well in advance add the avocado and hour or two before serving.
Place a circle of tomato slices on each plate. Place the crab salad on top and decorate with rocket.
