Caramelised Pear and Blue Cheese Skewers
Last post for vegetanuary and this canape is both quick and tasty. Furthermore, with only a pear, a few cubes of cheese and some chopped walnuts - oh and a few tiny grams of butter and a drizzle of honey - it only has 3 (or 5 if we are being truly accurate) ingredients. It can be made the day before it is needed, so perfect for easy entertaining.
Ingredients - makes 10
1 large fairly firm pear
10g butter
1 tbsp runny honey
25g walnuts, chopped
25g gorgonzola or other blue cheese (stilton is good for vegetarians)
Small bamboo skewers
Method
Peel and slice the pear into 1 cm slices, avoiding the core. Cut even sized piece of pear, approximately 1.5cm x 1.00cm to end up with 20 pieces.
Melt the butter and gently sauté the pear pieces until they are softening.
Add the honey and cook until the pear is just starting to caramelise.
When cool enough to handle, roll the pear in the chopped nuts.
Cut the cheese into 10 cubes, similar in size to the pear.
Thread the sticks, pear, then cheese and then pear.
Chill until ready to serve. Take out of the fridge 10 minutes or so before required. They can be made a day before needed.
